About the Holiday

There’s a true art in putting together a delicious meal from seemingly disparate parts, and this month’s holiday honors those with a talent for combining tastes, flavors, and textures. With fresh ingredients available from farm stores, farmers markets, grocery stores, and maybe even your own garden, July is a great month for celebrating the culinary arts. This month, spend time with your kids in the kitchen. It’s a terrific way for them to learn cooking skills and even practice practical math while creating experimental or favorite recipes. And, of course, be sure to remember to make a few treats! Today’s book should get you off to a delicious start!

This is a Birthday Cake

Written by Andrew Cangelose | Illustrated by Josh Shipley

 

Andrew Cangelose’s two-layered story about making a cake and the history of cake is by turns hilarious and informative. First, kids meet Shelly, a turtle and the forest’s official baker, and Bucky, a rabbit and baker-in-training. Shelly explains that she is “teaching Bucky how to make a birthday cake.” Bucky is rarin’ to go because as soon as the cake is baked, “the party will start.”

But wait! A narrator breaks in on the very next page to reveal that “cake was first used to celebrate birthdays in the Roman Empire two thousand years ago,” but “only became widely popular about two hundred years ago during the Industrial Revolution.” Bucky isn’t too keen on the delay this history lesson has caused, and even less patient with Ms. Shelly’s directive to “visualize out beautiful cake in our minds.”

But wait! The narrator has another interesting point to make, during which Bucky takes to sticking birthday candles up his nose and in his ears. Finally, Shelly says it’s time to get the recipe and all of the ingredients. Bucky, it seems, is already those steps ahead of Ms. Shelly and hot-foots it out the door, giving her a podcast-worthy “Byeeeee!”

As Bucky speeds into the forest, the recipe tightly gripped in his hand, he imagines his success and the accolades that will follow. At home, Shelly is slowly and methodically making the batter. Bucky takes a moment to reflect on the results of his soon-to-be triumph: “another party just to celebrate [his] accomplishment” and the sad fact that he will most likely be asked to be the new official forest baker.

But what about the ingredients, Bucky? The narrator begins to outline the necessary elements to a good cake. Hmmm… seems Bucky has forgotten to bring these along. No worries, though. Garbage, the ground hog tells Bucky that dirt is delicious: “a little sweet. A little sour. A lot of worms.” Bucky adds it to his pot. Still, he needs a sweetener and a liquid as the narrator describes.

Now, with her cake in the oven, Shelly is relaxing with a hot cup of tea with honey, while Bucky is hightailing it away from a swarm of angry bees. A champion-spitting frog is happy to help out with the liquid. At last, it’s time for the mixing. Ignoring the narrator’s warning about overmixing, Bucky goes at it like a tornado. With no oven to bake his cake in, Bucky comes up with an… ingenious?… solution.

What’s a birthday cake without decoration, though? To get things moving along quicker, Bucky elicits the help of his forest friends, and in no time, it’s finished. What about Shelly? She’s still carefully drizzling colorful icing on the layers. It’s a good thing Bucky’s cake is ready. The forest animals line up for big pieces, excited to party.

But while Bucky’s congratulating himself and extolling his speed, the animals are coming to a grim realization. It doesn’t take long for Bucky to understand that maybe his cake is a disaster. Fortunately, Shelly is on her way with another cake. The animals watch her coming closer, and closer, and closer… until ta da! “The birthday cake has arrived!”

With two cakes on offer, Shelly wonders about the voracious response to hers, and Bucky reveals his unique recipe. He even admits that he went to fast and that he needs to slow down when he’s excited. Shelly is understanding and promises they can try again tomorrow—if only they can get home before morning.

Wonderfully paced and with funny, realistic dialogue, Andrew Cangelose’s fourth book in his This is a Taco series will have kids and adults laughing out loud as they read it together. Suspense builds as Bucky runs out to bake his own cake with only the recipe to follow. Wanting to discover what substitutions he makes for each ingredient will have readers whipping through the pages as fast as Bucky stirs the batter. And his self-confidence throughout adds another layer of amusing storytelling. Cangelose’s intermittent inclusions of information on the history of cake and a typical recipe is a genius device that not only informs but amplifies Shelly’s slow, careful process that drives Bucky crazy. Bucky’s admission that he worked too fast and Shelly’s patient and understanding response to his failed cake serve up just the right message, sweetened with love.

Josh Shipley’s hilarious illustrations perfectly convey Bucky’s impatience as well as his confidence in his baking prowess. As Bucky’s forest friends help him create his cake, their roles are all the more comical for Shipley’s understated depictions. Clever juxtapositions and well-loved cartoon tropes add to the fun. As the animals—all except one—reject (and eject) the cake, kids will laugh but also empathize with Bucky’s now-sheepish and disappointed expression.

A masterful collaboration between story and art, This Is a Birthday Cake is a humorous and heartfelt must for fans of the series and newbies alike. The book will become a quick favorite on home, school, and public library bookshelves.

Little Chef

Lizzie is a little girl who has always loved to cook. Today, Lizzie is extra excited because “Grandmas is coming over for dinner!” Lizzie has learned all of her cooking skills from her Grandma, and tonight she is going to prepare a special dinner just for her.

Lizzie knows she’ll need extra energy today, so she’s starting off by making her “famous scrambled eggs.” She whips eggs in a bowl with a fork and adds salt and pepper. After breakfast, Lizzie and her mom get ready to go to the farmers’ market to buy the ingredients for “Grandma’s Super Special Smashed Sweet Potatoes.” Lizzie wants Grandma to see that she “can cook just like her.” At the farmers’ market, Lizzie picks out the freshest sweet potatoes she can find. Back home, Mom and Dad peel and chop the potatoes and help Lizzie put them into the big pot of boiling water. When the potatoes are soft, it’s time for “the best part about making Smashed Sweet Potatoes. Smashing them!”

Then “it’s time to add the secret ingredient! Grandma says every great recipe has one. It makes a chef’s food taste extra special and delicious.” But when Lizzie consults the recipe, no secret ingredient is listed. Lizzie decides she will just have to add one of her own. She looks in the spice cabinet and after going through bottle after bottle, she finds the perfect one. Lizzie gives her finished Smashed Sweet Potatoes a taste and waits for Grandma. Finally, Grandma arrives and everyone sits down to dinner. When Daddy tastes the sweet potatoes, he says, “‘Mmm!’” Mommy says, “‘ Mmmm!’” too.

But what will Grandma say? Grandma takes a bite and exclaims, “‘These are even BETTER than my own Super Special Smashed Sweet Potatoes.’” Then Grandma wants to know what Lizzie’s secret ingredient is. But of course Lizzie can’t tell her that! Grandma picks up Lizzie and gives her a big hug. “‘…being with you is the best ingredient of all,’” she says. And as Lizzie lies in bed later that night, reading her cookbook by flashlight, she wonders what she’ll cook tomorrow.

A recipe for Chef Lizzie’s (Grandma’s) Super Special Smashed Sweet Potatoes that encourages young chefs to experiment with their own secret ingredient follows the story.

Kids who love to cook or help out in the kitchen will be delighted by Matt Stine and Elisabeth Weinberg’s story of a little girl who wants to impress the grandmother who inspires her. Lizzie’s enthusiasm for cooking and her confidence in her skills make this an uplifting tale for children of all talents. Lizzie’s special bond with her grandmother adds a tender family element to the story and her big-hearted nature makes her a sweet companion for little readers. The recipe included in the back of the book invites children to make Lizzie’s Smashed Sweet Potato recipe and find their own secret ingredient—an invitation few will be able to resist.

Adorable little Lizzie, with her wild frizz of hair is energetic, thoughtful, knowledgeable, and a free spirit. With dashes of humor, Paige Keiser follows her through a day of creating the perfect dinner for Grandma. Dressed in her chef’s uniform, Lizzie splashes her dog with egg, sends him sneezing in a cloud of pepper, and turns him orange as she whacks away at the soft chunks of sweet potatoes. Images of Mom and Dad happily encouraging and supporting Lizzie in her cooking are heartwarming, and Grandma’s big hug is as sweet as it gets.

A charming and inspiring story, Little Chef is a fun read for culinary kids and any child experimenting with their talent and striving to do their best. The book would be a welcome addition to home, classroom, and public libraries and a great gift for grandmothers and grandkids to share.

When the ears are picked, shucked, and dried, the kernels are ready to be tossed “Plink, plunk, plink” into a pot and heated up. Do you know what kind of corn it is now, or do you need another hint? Okay… “Steam builds around each kernel’s germ, / puffs the starch called endosperm.” A bit of science brings about explosive results then “first one pop! Then pops galore!” You know now! The kids grew their own popcorn! When the pot is overflowing it’s time for “butter, salt, then give a swish. / Lick our fingers—Mmm! Delish!”

Fascinating backmatter reveals the science behind this favorite treat. Diagrams and photographs let kids see inside a popcorn kernel and view the progression of a kernel as it is heated. They also learn about the two different shapes of popcorn and how they are used. A science activity gives readers the steps for growing their own popcorn from seed to sprout and reveals what transformations take place inside the kernel as the little plant grows. A popcorn art project fills out this STEAM lesson that’s sure to be a favorite.

There may be no more universally loved snack than popcorn, and Cynthia Schumerth makes learning about the science of growing the plants, preparing the ears for popping, and what happens when the kernels are heated lots of fun. Her bouncy rhyming storytelling will engage kids and get them excited about all the lessons these tiny kernels have to teach. Schumerth’s storytelling builds to its “kaboom” moment, mirroring the suspense popcorn lovers listening for that first Pop. Teachers and homeschoolers will love the resources following the story, which provide for a full lesson appropriate for science, nature, or cross-curricular lessons.

Mary Reaves Uhles’s action-packed illustrations will enthrall kids with their close-up perspectives and relatable details, like the little girl who’s wearing a cat’s ears headband as she digs up the ground for planting. Readers go underground to get a worm’s eye view of the kernels sprouting roots, get down in the dirt to pull weeds, and peek into the pot to make sure there’s going to be enough popcorn for the whole crowd. Images of the kernels pop, pop, popping show the process and will make kids plenty hungry. The final spread of all of the kids enjoying their harvest together is a celebration of popcorn and friendship.

An exuberant story that will spark enthusiasm for science learning and gardening, Let’s Pop Pop Popcorn! will be a quick favorite and is highly recommended for home, classroom, and public libraries.

February 25 – It’s Bake for Family Fun Month

Whether you and your family have always liked to bake together or you’ve found a new hobby in the past year, February is a great time to scour cookbooks or find recipes online and add some new taste sensations to your traditional favorites. Baking together teaches valuable cooking skills and is a creative way to engage with math. It can also bring your family closer as you talk about old memories that revolve around baking or cooking and make memories for the future. Of course the best part of baking together is eating the delicious treats afterward!

Ginger and Chrysanthemum

Ginger has come to visit her cousin Chrysanthemum. “They’re as close as two beans in a pod,” but they don’t always see things the same way. Today is their grandmother’s birthday, and they want to make it perfect. Chrysanthemum has made a list of things they must do. First, she says they must dress up. While Chrysanthemum puts on the tidy checked dress she brought along and slips on a matching headband and cool, white sandals, Ginger tries on everything in her closet.

When Ginger’s ready, Chrysanthemum consults her list again and finds it’s time to shop for decorations and a gift and then head to Grandma’s New Asian Kitchen restaurant to decorate. Ginger doesn’t want to take time to read a list, though, and pulls her cousin out the door. They hurry to the market to do their shopping. Ginger finds paper lanterns in every color and thinks it’s fun to balance a stack of them on her head. Chrysanthemum knows Grandma loves flowers and chooses ginger and chrysanthemum flowers for the party. For Grandma’s gift, they buy a jade pendant.

One thing the cousins do agree on is that they love to help out at the grandmother’s restaurant. While each girl has their own favorite job to do, today they are decorating together. Ginger is running around hanging lanterns and Chrysanthemum  is carefully placing flowers on the tables when Grandma asks which of them would like to bake the birthday cake. Ginger has visions of making “an AMAZING cake with BLAZING candles” while Chrysanthemum says, “‘I’ll make a cake light and cool as a cloud.’” Grandma suggests they work together to make her green tea cake.

Ginger rushes around the kitchen, banging pans and rattling bowls; Chrysanthemum makes another list and patiently lays out all of her utensils and ingredients. Ginger is mixing the flour, eggs, and sugar with such vigor that the batter splashes everywhere. “‘Ginger, you’re too messy,’” Chrysanthemum tells her. Ginger is upset with how slowly Chrysanthemum is working. “Chrysanthemum steams like a teapot.”

Both girls reach for the green tea powder at the same time, but Ginger’s faster and dumps it in the bowl. Chrysanthemum yells at her cousin that she’s not following the recipe, but Ginger grumbles that “‘a recipe is just a fancy list.’” With the cake ruined, the girls take a break and decide to make another cake. But there’s no more green tea powder. They mull over the problem then Ginger suggests using chrysanthemum tea instead of green tea, and Chrysanthemum thinks of using ginger ice cream for the frosting. Ginger cleans up the mess while Chrysanthemum measures out the ingredients. “Ginger mixes. Chrysanthemum pours.” When they lick the spoon, the batter tastes delicious.

At the party, Chrysanthemum and Ginger take Grandma by the arms and lead her over to show her their cake. “The cake looks a little lopsided, the color slightly strange…. Ginger and Chrysanthemum hold hands – and their breath” as Grandma takes a bite. “She loves it!” She hugs her “little soybeans.” Then Ginger and Chrysanthemum share a slice. “Warm cake, cool icing. Perfect together. Like two beans in a pod.”

An Author’s note explaining the traditional Chinese belief that foods have warming or cooling characteristics and should, ideally, create a balance follows the text.

In her entertaining story of two cousins with opposite personalities, Kristen Mai Giang cleverly uses the Chinese concept of warm and cool foods to create impulsive Ginger and precise Chrysanthemum. As the girls dress and shop for Grandma’s party, readers will be charmed by the cousins while giggling at their differences. When mishaps while baking Grandma’s cake fray their nerves and lead to angry words, Giang introduces a gentle lesson on how to get back on track and cooperation. While taking a break, Ginger and Chrysanthemum rely on their close relationship to come up with a solution that pleases them both. Kids will appreciate the ingenuity in their new recipe that combines both of their personalities and may be inspired to try making up a cake recipe of their own.

Shirley Chan clearly sketches out Ginger and Chrysanthemum’s opposite personalities in the first pages as Ginger stands in the middle of her messy room sporting a mix-and-match outfit appropriate for a rock star while Chrysanthemum channels a runway model in her perfectly accessorized dress. Spontaneous kids will identify with Chan’s depictions of Ginger playing around at the market while careful children will admire Chrysanthemum’s thoughtfulness in choosing just the right flowers. Chan’s images of the two spirited girls in the kitchen will enchant young readers, and the party scene is vibrant and inviting.

A creative and relatable story to inspire teamwork and a celebration of individuality, Ginger and Chrysanthemum would be an engaging addition to home, school, and public library collections.

Hot Breakfast Month was established to encourage people to have a hot, healthy breakfast before they go off to work or school. A good breakfast can keep your brain and your body working longer and better, which will result in a good day and more happiness in your life! And during this cold month, it feels good to get the day started off with a warm, satisfying meal. So scramble up a few eggs, make a bowl of yummy oatmeal, or whip up a batch of pancakes or waffles. And if you’re following a more plant-based diet, there are lots of grains and greens that will give you a nourishing sendoff.

Let’s Eat! Mealtime Around the World

If you’re raising a culinary conscious and curious kid satisfies that gnawing hunger for more information on world cuisine. Visiting families around the globe at breakfast, lunch, and dinner time, Lynne Marie offers up tidbits about what kids eat plus other interesting food facts. The first stop is China, where Yu Yan is enjoying a bowl of congee—or rice porridge—before heading out to school. This morning, the congee includes squid that her father has caught. Yu Yan “slurps loudly to show how much she likes it.”

High in the mountains of Peru, Luz is bundled up in the early morning air as she gets ready to help out with her grandfather’s llamas. First, she warms up with chuño cola—a soup made from freeze-dried potatoes. For Luz, breakfast usually consists of leftovers from dinner the night before. Hospitality is so important to people in the Philippines that one of the most common greetings is “‘Kumain ka na?’ meaning ‘Have you eaten yet?’” If not, you may be invited to join in a breakfast of spamsilog—a dish of fried SPAM, fried eggs, and garlic rice.

In Jamaica, Zhade and her mother make savory pastries filled with spicy ground beef. These can be eaten on their own or wrapped in coco bread—a soft, sweet bread—to make sandwiches. For Camille, living in France, lunch is a four-course meal served at school. Today, Camille and her friends are having “a cucumber and tomato salad, then a main course of roast beef with cooked broccoli. Next, a small plate of cheese, finished with apple tart for dessert.” It must not be Wednesday, though. In France, there’s no school on Wednesday afternoons. “Instead, many attend on Saturday mornings.”

It’s dinnertime for Priya, who lives in India. She and her family are at their favorite restaurant, where Priya has ordered Tandoori chicken. “Tandoori chicken is marinated in yogurt and spices then roasted in a tandoor, a round clay oven.” After dinner, she and her family go home to watch cricket on TV.

For many families in Sweden, Thursday dinners follow a tradition that goes back to the fifteenth century. Tonight, Hugo is having “pea soup and pancakes with lingonberry jam. Perfect for keeping warm on a cold winter night.” Lingonberry jam isn’t just for pancakes. It can be used in a variety of sweet and savory dishes.

Finally! It’s time for dessert! In Egypt, Mandisa and her brother are enjoying basbousa—a coconut cake. They especially like it with a topping of rose-blossom or orange-blossom syrup that makes it taste extra sweet. In Nigeria, Chetachi can’t wait to dig into the bowl of tropical fruit sprinkled with coconut. It looks like his sister would like some too! All over the world, people sit down to meals with foods they love. Learning more about these dishes and trying them is a great way to feel a sense of community with other kids.

Pancake Flip-Out Game

Pancakes are served in a stack because they’re so delicious that each one doesn’t last long! In this game see how many pancakes you can flip onto the plate!

Supplies

  • Printable Pancakes Template
  • Printable Breakfast Plate Template (optional – you can use your own paper plate or other dish)
  • Heavy stock paper, poster board, cardboard, or foam sheet (optional)
  • Glue
  • Scissors
  • Spatula (optional)

You can play this game several ways:

  1. Print and cut out the pancakes
  2. Glue the pancakes to the heavy paper, poster board, or foam sheet to make them heavy enough to toss and fly
  3. Print and cut out the plate template or use your own plate
  4. Place the plate on the floor
  5. Draw 3 concentric circles around the plate about 12 inches apart
  6. Give each player the same number of pancakes and choose someone to go first
  7. Each player takes turns tossing or flipping their pancakes, trying to get them onto the plate
  8. When a player has used all of their pancakes add up their score:
  • Hitting the target can earn you 20 points
  • Getting your pancake in the first circle around the plate earns you 15 point
  • Hitting the second circle is worth 10 points
  • Pancakes landing in the third circle are worth 5 points

Rotate through the players as many times as you like and add up the points at the end. The player with the most points wins!

Try this Option:

Instead of tossing the pancakes with your hands, try flipping them with a spatula! Or: Make up your own rules—and have fun!

The endeavor has been so successful that September is now known as National Chicken Month! While chicken on the dinner plate or in a sandwich is delicious, chickens also make good pets and—as today’s book proves—great friends!

On a cold winter day, Bear was coming home from his morning walk when “he saw a chicken, frozen in the snow!” He picked her and her knapsack up and brought them inside, where a warm fire crackled in the fireplace. “How does one defrost a chicken? thought Bear.” Bear took a blanket and wrapped the chicken like a burrito and held her tight until her eyes opened. When that happened, Bear smiled and Chicken found herself staring into two rows of very sharp teeth.

Bear took Chicken into the kitchen, where carrots and onions sat on the counter. Bear picked up his cookbook and began to read. “‘You are just in time,’” he said to Chicken. Chicken looked on worriedly as Bear filled a huge, chicken-sized pot with water and put it on the stove to boil. When Chicken inadvertently knocked over a pot of basil, Bear decided it was a perfect addition to his recipe.

With a newly sharpened knife, Bear chopped up carrots, celery, and onions. “‘Hmmm…what else is missing?’ said Bear,” looking right at Chicken. Bear lifted Chicken up to the pot of hot, bubbling broth. Imagining what would happen next, Chicken wriggled out of Bear’s grasp and ran away as fast as she could and out the front door.

Bear chased after her, and even though Chicken “zig-zagged through the trees,” Bear caught up with her. She glanced at the big stick Bear had raised over her head, and thought it was the end for her. But Bear, his feelings hurt, was just holding out Chicken’s knapsack. “‘You forgot this,’” he said. Surprised, Chicken blurted out, ‘”You’re not going to eat me?’” Now it was Bear’s turn to be surprised, and he explained that he was making lunch for both of them.

Still wary, Chicken protested that she wasn’t hungry, but her grumbling tummy gave her away. The two laughed, and after Bear promised to help Chicken find her way home, they went inside to enjoy delicious bowls of vegetable soup.

A Chicken to Crow About

 

A long-handled wooden turner makes a plucky decoration for your room or kitchen—and a great reminder to bring your passions to every job! In a few simple steps, you’ll have a cute companion you’ll want to crow about!

Supplies

  • Printable Comb and Scarf Template
  • Long-handled wooden turner, available in kitchen supply stores
  • Red felt
  • Yellow bakable clay
  • Fabric, 12 inches square
  • A small piece of white felt or fleece (optional)
  • White paint (or any color you would like)
  • Black marker
  • Fabric glue
  • Glue gun
  • Paint brush

Directions

  1. Paint the wooden turner, let dry
  2. Cut the scarf from the piece of fabric
  3. Make a beak from the yellow clay and bake it according to package directions

To make the comb

  1. Cut out the comb from the red felt
  2. Fold the felt in half and glue the end together with the fabric glue
  3. Cut short strips from the folded top of the felt, about ½-inch to ¾ -inch in length
  4. Round the corners of the strips slightly

To make the scarf

  1. Fold the fabric in half
  2. With the long, straight edge of the scarf template along the fold, cut out the scarf
  3. With the fabric glue, glue the two sides of the scarf together so that you have two “right” sides
  4. Let dry

To assemble the chicken

  1. Pinch the bottom of the comb together so that the strips open and the felt pleats a little
  2. With the glue gun attach the comb to the back of the painted turner, keeping the bottom pinched together
  3. Attach the beak to the front of the turner
  4. Draw eyes on the chicken with the black marker
  5. Tie the scarf around the neck of the handle, hold in place with a drop of glue in the back if necessary
  6. To make tail feathers in a turner with a hole in the handle, pinch together a small folded piece of white felt or fleece and push it through the hole in the handle of the turner.
  7. Cut or arrange to look like feathers

Starting on the East Coast in the state I grew up in, we visit Florida, where as Gabrielle Langholtz says, the “tropical weather allows farmers to grow all kinds of fruit, including lots of citrus.” The plentiful coastline on this peninsula also provides “fish such as grouper, pompano, and mullet.” Residents from Cuba Jamaica, Haiti, and the Bahamas have brought “Caribbean dishes such as mashed yucca,…fried plantains,…and arroz con pollo.” A slice of refreshing Key lime pie deliciously finishes off any meal. Some other tidbits to gnaw on before getting to the Key Lime Pie recipe on the next page revolve around the Cubano sandwich, conchs, alligators, and stone crabs.

Moving up the coast and a bit inland, we come to Pennsylvania, where members of the Pennsylvania Dutch community know how to dish up traditional flavors from their German heritage that are still favorites with adults and kids. Some of these include “chicken potpie, ham loaf, egg noodles, and schnitz un knepp, or pork with dried apples.” You’d also find bright pink hard-boiled eggs (colored by pickling them with beets) and hinkelhatz, a hot pepper used to make sauerkraut from homegrown cabbage. Other local delicacies include button mushrooms (“The tiny town of Kennett Square, home to only six thousand people, grows more than a million pounds of mushrooms each week! That’s half of all the mushrooms farmed in America.”), chow chow, cheese steak, scrapple, and pepper pot. Turn the page and you’ll find a recipe for Soft Pretzels, a well-deserved pride of Pennsylvania.

Trekking into the very middle of the country, we discover Missouri, which in addition to it’s tasty treats has a distinctive connection to home cooks everywhere. In 1931 Missouri resident Irma Rombauer “published 3,000 copies of The Joy of Cooking…. Irma’s book showed American food in a time of change.” While it contained recipes “for farm foods, like pickles, pie, and even possum…The Joy of Cooking also included recipes for canned ingredients, which many people saw as the foods of the future.” Irma may have been inspired by hearty Missouri fare like steak (a favorite ever since cowboys began bringing cattle from the southwest to the rail yards in Kansas City, MO), black walnuts from the Ozark Mountains, toasted ravioli, introduced by the state’s Italian immigrants, and partridge, a purported fave of Mark Twain. When you’re ready to create a true Missouri original, turn to the recipe for St. Louis Gooey Butter Cake that is a “creamy-on-the-inside and crisp-on-the-sugary-top treat.”

Travel down and west a few states to find New Mexico and its spicy cuisine. Known for its chile peppers (when you order be prepared to answer “the state’s official question ‘red or green?’”), New Mexico boasts home cooks and restaurants who can really highlight this hot ingredient. You can enjoy Posole, which is hominy simmered with green chiles and shredded pork or chicken; carne adovada, “pork cooked in red chile sauce with vinegar” and served with warm tortillas; and spicy pie, which is “apple pie baked with spicy Hatch chiles and often eaten with a scoop of vanilla ice cream.” If you want to try something non-spicy, take a taste of prickly pear or piñon nuts. Hungry for a cookie with a bit of snap? Try the recipe for the anise-flavored Biscochitos, the official state cookies of New Mexico, that pair nicely with hot chocolate.

Finally, this culinary caravan reaches the west coast and Oregon’s diverse flavor sensations. On the coast, fish and seafood as well as fiddlehead ferns, chanterelle mushrooms, and berries are seasonal treats. The Cascade Mountains offer more fishing, and in the valleys below fruit orchards provide apricots, peaches, pears, and apples. Foodies will be interested in snapshots that include the fact that “Oregon grows 99 percent of America’s hazelnuts” and that “scientists at Oregon State University developed delicious new berry varieties that include marionberries and tayberries.” You can get your day off to a healthy start with the hearty recipe for Granola with Hazelnuts and Cherries.
